mayonnaise
3 egg yolks
milk
45 grams of sugar
15 grams of cocoa powder
32 grams of corn oil

1. Separate 3 eggs, egg whites, and egg yolks first, put the egg whites in the refrigerator to freeze (note that there should be no water or oil in the egg white container), heat the milk, pour in the cocoa powder, and mix well.
2. Add corn oil and stir well until emulsified.
3. Add egg yolk and mix well.
4. Strain into the low-gluten flour.
5. Stir until the batter is smooth, free of dry powder, and grainy.
6. Remove the egg whites from the refrigerator. The edges of the egg whites are at their best. Add a few drops of lemon juice to the egg whites. Beat with an electric mixer until foamy, add half of the sugar.
7. Continue to beat until the egg whites begin to thin, adding the remaining caster sugar when lines appear.
8. Continue to beat until the meringue has straight, sharp corners.
9. Scoop one-third of the meringue into the egg yolk batter.
10. Chop the egg yolk paste and mix well. Do not stir in circular motions as this will defoaming the yolk paste.
11. Mix well, then pour the remaining egg whites into the egg yolk mixture.
12. Stir in the same way.
13. Pour the mixed egg batter into the mold. Shake the mold twice to get the big air bubbles out.
14. Put it in the oven to bake.
15. Shake a little once out of the oven, flip over quickly, place on a cooling rack, and let it cool completely before demolding. Divide the cake into thirds after unmoulding.
16. Whip the previously prepared chocolate cream, put it into a piping bag, squeeze a layer on the cake slice, put your favorite fruit, and then stack a layer of cake slice and put the fruit.
17. Sprinkle some powdered sugar on the surface, and a beautiful chocolate cake is done.
